Ginger Vinegar Cotechino Modena PGI


Cotechino Modena PGI portion to size.

Make ginger sweet & sour sauce: cook sweet vinegar in meat stock, reduce to consistency.

Add boiled egg and young ginger to the sweet & sour sauce, simmer for 10 mins and let stay for at least an hr to absorb the sauce to make candy egg and pickled ginger; cook easonal vegetables.

Coat Cotechino Modena PGI with batter, fry to serve with candy egg (half egg per serving), ginger & vegetables.

• 200 g seasonal vegetables
• 4 pcs young ginger
• 300 g batter
• 500 ml sweet & sour sauce
• 200 ml sweet vinegar
